Asian Quinoa Slaw

Today was a cold one. No snow (unfortunately) but one of those days where you are always cold no matter what. Do you have any of those? Just me? Ok. Anyways, I found myself longing for those hot summer days. That's always the case isn't it? When it is winter you crave summer and when it is summer you crave winter. I do really love winter, but the part I love about it is the snow (yay skiing!!). When there is no snow and it is just cold, it kinda sucks.
One way to re-create summer is through food. When you can muster up the courage to go grocery shopping in this frigid weather, make sure the ingredients for this salad is on the list!

This salad screams summer and is perfect to pack for lunches during the week! Save your time waiting in the Timmies line and make this the night before.

I use more quinoa than recommended to pack in extra protein, but that is just me! You can alter the amount of any ingredient to satisfy your own personal taste. Note: when cooking quinoa it quadruples in size, there fore 1/4 cup of uncooked quinoa equals 1 cup cooked. This recipe calls for 2 cups cooked quinoa so you would measure out 1/2 cup uncooked :)
Asian Quinoa Slaw

INGREDIENTS:
For the Slaw:
1 (16-ounce) bag shredded red cabbage (or about 4 cups shredded cabbage)
2 cups cooked quinoa
2 cups shredded carrots
2/3 cup thinly-sliced green onions
1/2 cup slivered or sliced almonds, toasted
2 tablespoons sesame seeds
Asian honey vinaigrette (see below)
For the Vinaigrette:
1/3 cup vegetable oil (or any cooking oil)
3 tablespoons rice wine vinegar
1 tablespoon honey
1 teaspoon soy sauce
1/8 teaspoon sesame oil
salt and pepper to taste
INSTRUCTIONS:
1. Slaw: Toss all ingredients together.
2. Vinaigrette: Whisk all ingredients together.
